Herbal teas were brewed in England for centuries before tea. Often the taste is more subtle than traditional tea but usually people soon acquire a taste for the more delicate flavours of the herbal infusions. Add to this the medicinal properties of the herbs and it is easy to see why herbal teas are regaining their popularity.
Chamomile
One of the stronger herbal teas with a distinctive fruity aroma and a slight tang. Often used for digestive disorders, it is also said to be aid to relaxation and in larger quantities can help aid sleep.

Amongst the most delicate and fragrant of herbs, Elderflower makes a delicious brew that has hints of liquorice and aniseed. A small amount of sugar or honey can help to bring out the subtle flavours.

This is a herb grown in various South American countries. The national drink of Argentina, it is said to be rich in antioxidants and anticarcinogens. It also gives energy and acts as a stimulant. Drunk without milk, it has a slightly smokey flavour due to the leaves being toasted. Sugar or honey can be added as a sweetener.
